CHOPPED CHICKEN SALAD

Gwyneth Paltrow's new cookbook, It's All Easy,  came out last week and it is a must have for anyone who loves to eat well but doesn't have hours to spend in the kitchen!  As you know if you read my blog regularly, yesterday was a crazy day!  I had so many things to do, but I was determined to make something healthy for dinner.  I decided on the Grilled Chicken Chopped Salad.  I had a meeting at 6:30, so earlier in the day I grilled the chicken breasts (I marinated mine in a basic vinaigrette but the recipe doesn't call for that), blanched the green beans and made the salad dressing.  When I got home I assembled the salad which took about 10 minutes.  It was delicious and there was some leftover for lunch today! The salad does make a beautiful presentation!  I also bought the ingredients to make the Roasted Beet and Blue Cheese Salad and you can be sure I'll let you know about that one as well.

The bowls were made by my daughter Rebecca!  They are the perfect size for a main dish salad!

This recipe serves one person, but can easily be made to serve as many as necessary.  I didn't roast the red pepper, but I did chop it into bite size pieces and I tossed in a little olive oil and sprinkled with the basil.  Don't leave out this step because the basil adds so much flavor!  Also, I didn't add the anchovies.  If you like the flavor of anchovies, but don't like the texture, you could add a little anchovy paste to the dressing.  This is a great salad!
