Lauren is Taking Over Crazy Blonde Life Today!

I'm so excited because my daughter Lauren is taking over Crazy Blonde Life today!  Lauren and her husband Chris and baby Hudson moved to Atlanta almost three weeks ago.  I miss them so much, but I'm so happy to be collaborating with Lauren on this post!  Lauren is a great cook and healthy eater and is gluten free because she has celiac disease.  She is always trying new recipes and I hope she'll agree to share more of her gluten free adventures with you!

I look forward to many more collaborations with Lauren, and I'm doing my best to get Rebecca and Sarah on board with Crazy Blonde Life as well!

As a busy mom of an eighteen month old, I am always looking for easy, simple meals that are also healthy.  Hudson does not allow me to spend a lot of time in the kitchen, so when I saw this one sheet pan salmon recipe on the blog, Waiting On Martha, I had to try it!  This dish took me less than ten minutes to throw together and it was beautiful and delicious.  It also made our whole house smell amazing!  I found the most perfect heirloom tomatoes at Trader Joe's and they absolutely made the meal for me.  They were sweet and juicy and complimented the more savory salmon and green beans perfectly.  I also used Maldon Sea Salt, which is one of our favorite things.  It makes everything taste better.

I made this salmon for a quick Friday night dinner for just the three of us, however I think it would be great for a dinner party...it looks pretty impressive, but it's so easy!  I hope you all try this out and enjoy it as much as we did!
