Field Pea, Corn and Bacon Salad

Summer's freshest ingredients combined in an easy to make, crowd pleasing salad!

Anything with corn and fresh shelled peas is delicious and when you add a little bacon and some pesto, you've definitely got a winning combination.  This salad combines all of the deliciousness of farmer's market fresh corn and peas with a little fresh mint for a twist.  It makes a great side dish with grilled fish and would be the perfect addition to your July 4th buffet.  I served the salad on these beautiful melamine plates (similar here and more below) that are nearly indestructible,, making them a must-have for summer outdoor entertaining.  I hope you enjoy!
