Easy Weeknight Dinner - Chipotle Chicken Enchilada Bake

I made this easy, delicious recipe for dinner tonight and it was amazing! The chicken is cooked in enchilada sauce, so there is no added fat…I did add a little olive oil although the recipe didn’t call for it. It’s layered with corn tortillas so it’s gluten free. It’s topped with cheese, scallions and cilantro and I served it with guacamole, salsa and sour cream! Delicious, healthy and sooo easy! The perfect weeknight dinner! Just add a salad and you’ve got a fabulous meal!

In the above pictures, from left to right, the chicken simmering in the enchilada sauce, green chilis, and adobo sauce. Center, the chicken once removed from the sauce and shredded and right, the casserole ready to go into the oven. You could also use a 9 x 13 casserole dish for this recipe.

One thing that’s really helpful in getting meals on the table quickly is to have a well stocked kitchen! Here are a few basic items that you may need. I use my cast iron skillet almost every time I prepare a meal and think they are the best for cooking food evenly. I have 3 large ones and a smaller one that belonged to my mother. This one is on my wishlist because I can just picture a cookie cake baked in it!
