If you're craving a bagel with cream cheese and smoked salmon, but don't want to eat one because of the calories, this might be just the tasty alternative you're looking for!
A thin slice of the bread of your choice, ciabatta (what I used), rye, whole wheat, or whatever you like is fine, add lowfat cream cheese, Dijon mustard, capers and smoked salmon and you have a healthy breakfast or lunch. This would also be great paired with a salad for a light dinner.
Simply toast the bread slices, spread on the cream cheese while the bread is still warm and top with capers and smoked salmon. Serve with Dijon mustard. Cucumbers would also be very good on this open faced sandwich!
