These two versions of avocado toast are my favorites! I'm not a big egg eater, but I like them boiled so this is a great way for me to incorporate some eggs into my diet! The combination of the egg, feta and avocado is a winner! The second version, Sliced Avocado with Garlic and Herb Cheese would also make a really great hor'doeuvre for a cocktail party. I posted these pictures on Instagram @Smithsuzanne and got a great response so I decided to share the recipes!
The avocado stays green with the addition of lemon juice and it keeps for several hours in the refrigerator with a damp paper towel and plastic wrap on top.
I had a little helper this morning while making the Avocado Toast!
