Asian Qunioa Salad is as beautiful and delicious as it is healthy! You'll want to make this once a week!
ASIAN QUINOA SALAD
4 cups cooked white quinoa
1 cup red cabbage, finely sliced
1 cup carrots, peeled and julienned (I grated them)
1/4 cup chopped scallions
1/4 cup finely sliced radish
1 teaspoon toasted sesame oil
Juice of 1 lemon
4 tablespoons Tamari sauce
2 tablespoons rice vinegar
3 tablespoons water
Salt and freshly ground black pepper to taste
Combine all salad ingredients in a bowl. Whisk dressing ingredients in separate bowl and pour over quinoa. Mix well and serve.
