Made with kale, toasted walnuts and a balsamic dressing - this salad is a power house salad. Be prepared to love it, even if you don't love brussels sprouts or kale. I think you'll agree after you make this salad that this is the best healthy salad ever! It's full of healthy ingredients - beets, brussels sprouts, quinoa, kale, shallots and feta! It would be great as a side to simply grilled salmon or chicken, or on its own as a light vegetarian dinner.
Roast the beets with a drizzle of olive oil and a sprinkle of Pink Himalayan Sea Salt.
Cook quinoa according to package directions with vegetable or chicken broth.
Trim the brussels sprouts and slice.
Thinly slice the shallots.
Remove the stems from the kale and cut into pieces.
Saute shallots in olive oil and add brussels sprouts.
Add kale and cook until kale is wilted.
The walnuts are sauteed with maple syrup and balsamic vinegar.
The finished salad is beautiful - full of color and it just looks healthy!
This salad is well worth the time and is very good left over!
