Last night, Mr. Crazy Blonde and I delivered dinner to our friends Tiffany and Scott who just had the most beautiful baby girl, Fiona Grace. I actually wanted an excuse to go over and hold the baby, but I didn't want to go empty handed! When we drove up, I was so excited just to be able to hold her! There is just nothing like holding a newborn baby!
The menu for the new parents included Tomato Pie, Pesto Pasta Salad, and a Vanilla Almond Pound Cake from Michelle's Kitchen (her pound cakes are amazing), along with a bottle of red wine and some flowers.
This picture is the Tomato Pie just before going into the oven. For some reason, I didn't get a picture of them when they came out! If you've never had Tomato Pie, you should definitely give it a try. It is such an easy dinner to make and it reheats beautifully, making it perfect for leftovers. I've included the recipes for the Tomato Pie and Pesto Pasta Salad below!
The Pesto Pasta Salad is a meal on it's own. The pesto includes spinach so it is very healthy. It's topped with toasted pine nuts and Parmesan cheese.
