Last night for dinner I made soup and salad. The soup was a Sweet Potato and Poblano Soup, and the salad was a Charred Beet Salad with Avocado Crema. The ingredients are so healthy and the soup and salad were delicious! The soup had just a little kick to it from the cayenne pepper and the poblano and the salad was unbelievably delicious with the avocado crema on top of the beets. I'm happy to have some left over to eat for lunch today and I'm sure the flavor of the soup only improves as it sits in the refrigerator waiting to be reheated. The charred beet salad pictured below is so beautiful. I like the mixture of the golden and red beets on the platter and the napkins from Anthropology were the perfect color to compliment this dish! The chili lime salt on top was a tasty addition!
