I have been craving Brussels Sprouts since I saw this recipe in my new cookbook Eating in the Middle by Andie Mitchell.  I've been talking about this cookbook nonstop since I got it and I want to share one last recipe with you.  This salad is perfect for fall with the apple, gorgonzola and bacon and the flavors blend together perfectly with the brussels sprouts.  I am already planning to make this dish for Thanksgiving!  It comes together quickly and is hearty enough for a light lunch and can be easily doubled.
