I am not usually much of a breakfast person, but I'm trying to eat a little something healthy in the morning so that I'm not snacking by 10 am! I found this recipe for Greek Yogurt Berry and Banana Parfaits with Peanut Butter Granola and decided to try it because it sounded delicious, healthy and easy! The recipe makes more granola than you need so you can store it in an airtight container and use it for several days. Once you make the granola it only takes a minute to assemble the parfaits. What a great way to start the week!

Pour mixture onto a parchment lined baking sheet and watch closely so it doesn't burn!
