Brussels Sprouts with Maple Mustard Vinaigrette

I love Brussels sprouts and I'm always trying to find a new way to prepare them.  I came up with this recipe for Brussels sprouts with a Maple Mustard Vinaigrette to satisfy my craving for sweet and sour.  I am not kidding when I say that I have been eating these Brussels sprouts cold right out of the refrigerator...they are that good!  I will be serving them for our Thanksgiving and just making them randomly to snack on!  Next time I make them, I think I'll throw in a handful of sliced red grapes.  I hope you'll try my recipe for your Thanksgiving and add it to your recipe repertoire!  I'm also going to be preparing these Brussels sprouts for the cooking class I'm having at my home on December 1.  If you haven't signed up yet, email me at Suzanne@crazyblondelife to put your name on the list!  It will be a wonderful morning of cooking, laughing and eating seasonal, festive food!  Scroll down for a printable recipe for Brussels Sprouts with Bacon and Maple Mustard Vinaigrette.

Saute shallots and chopped walnuts in the bacon drippings.  Add mustard, red wine vinegar and maple syrup and stir to combine.  Combine this mixture with Brussels sprouts and chopped bacon.

Brussels sprouts are high in vitamin C, fiber and folate and they are delicious.  The walnuts add extra fiber and omega 3's!  You just can't go wrong with this dish.  It is the perfect accompaniment to salmon, roasted chicken or pork.  Let me know if you make this recipe and what you think!
