Chicken with Leeks and Lemon
I have the best recipe to share with you all today! I made Chicken with Leeks and Lemon for dinner last night and it is amazingly delicious and easy to make! It's from a cookbook that I've had for a while called Tender by Nigel Slater. I've never made anything from this cookbook that wasn't absolutely delicious and this recipe is no exception. This recipe will be your go-to for those nights when you want something healthy, delicious and easy!
The chicken pieces are browned in olive oil and then the leeks and carrots are added along with vermouth, chicken broth and lemon juice. The resulting broth combined with the melt in your mouth vegetables is rich and so satisfying!
I made this dish in my Le Crueset oval roasting pan. The chicken makes a beautiful presentation plated and served, but it could also be served straight from the pot on a buffet. Serve with a salad and a glass of wine and enjoy!
