Making A Delicious Beet Salad
I've been on a beet salad kick for a while now! I love beets and this salad is the perfect way to eat them..combining beets, blue cheese and pecans. Cook the beets the night before and assemble the salad right before serving.
Beets are an excellent source of folate and manganese. Folate is important for repairing DNA as well as helping with cell division and growth. It also helps to produce red blood cells and prevent anemia. Beets also have high levels of iron and they are delicious!
