Summer Veggie and Avocado Quinoa Bowl
I made this recipe several nights ago because I was wanting to make something really healthy! It isn't the quickest of recipes, but well worth the time, if you have it. This healthy bowl is made up of hummus, quinoa, green lentils, grilled veggies, cherry tomatoes, grated carrots and sliced avocado. I will confess that I forgot to add the goat cheese, and I realized that about halfway through eating it. It was actually delicious without the goat cheese but the addition of goat cheese would make this recipe over the top delicious!
If you don't love goat cheese, add burrata or a really great blue cheese, either would be great. I served this with grilled salmon and it was an extremely hearty meal. Summer food is the best and this bowl takes advantage of all the freshness that's available right now!
