Sheet Pan Salmon with Peppers and Cilantro Lime Butter
I made this recipe the day that it snowed and it was easy and delicious! It makes a beautiful presentation and the fajita seasoning makes it a real crowd pleaser. Serve it with tortillas and/or rice for an easy weeknight dinner.
To serve in tortillas, flake and fill with salmon and veggies. A squeeze of lime brings out the flavors and makes this dish even more delicious!
I'm really looking forward to a relaxing weekend! Today, I'm going to have lunch at a new food truck in town that I've discovered...it's so delicious and if you live in the area you need to know about it! It's called Fontojitos Catrachos and the food is Honduran. It's located at 1536 Webb Avenue in Burlington. I went yesterday because I thought it would be fun to take some blog pictures there and I was so amazed at how good the food was. I had an empanada with shredded cabbage and pickled onion.
