Roasted Carrot and Chickpea Bowls with Avocado

Bowls are very trendy right now and seem to be on every restaurant menu!  I love them because everything you need is in one bowl and the flavors mesh perfectly together!  This one starts with roasted carrots and chickpeas and then you make the most delicious pesto with the carrot tops. Serve with a drizzle of pesto, sliced avocado, a yogurt honey sauce, and warm naan bread.  It sounds complicated but I promise it's not.  You also have leftover pesto to use in another recipe or just over warm pasta (in a pinch, substitute store bought pesto).  You could eat this as a vegetarian meal, or throw some chicken or salmon on the grill to go with it.  It's the perfect healthy combination and it's very delicious!
