Meatless Monday - Easy and Delicious Vegetarian Chili
I always make a big pot of chili for Super Bowl Sunday and this year was no exception. I decided to go vegetarian this year, partly because of reading this article about the effects of meat on our health and on the environment. I was a vegetarian for 18 years and my reasons were mainly based on environmental issues. I started eating meat again because of some amazing bacon that I tasted from a local farm (isn’t it always the bacon). It was a gradual process, but I do obviously eat meat now, although it would be really easy for me to go back to being vegetarian…except for that darn bacon! I still try to buy responsibly raised meat and love a good vegetarian dinner most anytime!
This vegetarian chili is so flavorful that I promise…you won’t miss the meat!
This chili is so healthy and filled with Calcium, Potassium, Protein, Fiber, Vitamin C and Magnesium! It’s also better the second day…so make extra and eat it all week long!
