This delicious creamy cauliflower soup is proof that ease and flavor can coexist beautifully. Shared by a friend and now a staple in my kitchen, this recipe turns a few simple ingredients into something special. With just cauliflower, onions, raw cashews, vegetable broth, and salt, it achieves a rich, creamy flavor with very little effort. After slow-cooking until everything is tender, the mixture goes into the blender, and is transformed into a silky, plant-based soup thats so satisfying. A drizzle of Calabrian chili oil and a handful of roasted chickpeas add heat and crunch, elevating a simple meal into something special. This soup comes together with next to no effort which is perfect going into the busy holiday season. The slow cooker does the work, allowing the flavors to meld while you go about your day. It becomes so smooth and creamy (without the cream) when it’s blended because of the cashews. Serve it warm with a simple crisp salad and warm bread for a very satisfying meal. I found the most amazing Persimmon Vinegar from Flamingo Estate that makes a beautifully delicious vinaigrette to dress any salad and it’s perfect for fall!
These chickpeas are delicious right out of the oven, but I’ll be honest, they loose their crunch after they sit out for a while. Next time, I’ll use packaged chickpeas so they’ll be crisp for leftovers. If you like the flavors of cumin and smoked paprika, try adding those to the soup. This soup is so delicious as it is but I’ll experiment a bit because of the chickpeas! The Calabrian Chili oil is a must if you like a little kick…otherwise, just use a drizzle of really good olive oil and I didn’t mention a little parsley! These recipes evolve as we make and tweak them!
