A Healthy and Delicious Recipe - Roasted Carrots with Hot Green Tahini

I have a confession to make…

Most of the time when I make a recipe on Instagram, I haven’t tried it before! I can’t imagine having time to test everything out before I make it and for the most part, the recipes turn out great! There have been a couple of flops, but all in all, I’m really pleased most of the time. I knew when I saw this recipe for Roasted Carrots with Hot Green Tahini that it would be good but…it was not only good, it knocked my socks off! When I tasted it, I couldn’t believe the explosion of flavor in my mouth! The sweetness of the carrots combined with the heat of the peppers and the combination of dill and mint with a little salt…it’s just so delicious!

I am making an effort to post a few recipes over the next couple of weeks that are healthy because this time of the year, it can be so hard to eat well and so…this is my gift to you!

The recipe came from a cookbook called The Cook You Want to Be by Andy Baraghani. I picked this cookbook up in Lexington, Kentucky while I was there in the spring and I’ve loved it! Andy Baraghani apprenticed under Alice Waters, so you know he’s a great chef…all of his recipes have so much depth of flavor. I’m really excited to share this recipe with you and to keep making more recipes from this gorgeous cookbook! I love recipes that are beautiful and delicious and not too complicated which is good for my busy schedule!

Not only is this recipe delicious and healthy, it also totally fits my criteria of being beautiful! I couldn’t resist adding my own touch to the recipe, even thought it really needs nothing, but I like the crunch of toasted pine nuts and thought they would make a great addition, so I added a handful to the finished plated dish! You will wow your guests or your family (even my grandsons liked these carrots)! I served them with roasted salmon and it was a great combination!

These carrots are delicious leftover and the sauce is good on everything so if you have any leftover, definitely keep it or consider making extra to have on hand. It’s really such a healthy and flavorful spread to put on chicken, sandwiches or as a dip for veggies.

Serve these carrots with a sparkling Rosé, a Sauvignon Blanc or a Viognier. These wines pair nicely with the tahini as well as the stronger flavors of cumin and coriander. You should, of course use a hand blown glass from Haand for your wine!
