Easy Roasted Pork Tenderloin Recipe - A Winter Dinner for a Snowy Night

Elegant enough for company, easy enough for weeknights!

Yesterday was a snowy, cold day and I did not leave the house at all! I had a significant laser treatment on my face on Friday afternoon and I’m still healing from that so the snow gave me a perfect reason to stay in and get a few things done! I used the time to organize a few things in the house, get caught up on work and plan the week ahead. Since I was so busy, I didn’t really want to stop and take the time to make a pot of soup but still wanted to make a nice warming dinner. I decided to make this delicious Roasted Pork Tenderloin. We really thought the snow event was going to be more significant than it actually was, so like everyone else, we stocked up on some groceries and just happened to have a pork tenderloin in the refrigerator.

This recipe is one of the easiest you’ll ever make and it’s on the table in about 30 minutes…and since the seasonings are things you probably already have in your spice cabinet, you don’t have to worry about any special ingredients. This is my go-to recipe when I want something that looks impressive but comes together quickly! Fresh rosemary would be a tasty addition if you have it on hand but other than that…I wouldn’t change a thing! I served the tenderloins on my favorite white oval platter (similar here) surrounded by the roasted potatoes that I roasted at the same time as the pork. The combination was so pretty and the flavors were nothing short of divine! I used Yukon Gold potatoes, drizzled them with olive oil and seasoned with salt, pepper and a little Honey Aleppo seasoning…OMG they were so good! Keep scrolling for the recipe!
