Easy Roasted Pork Tenderloin Recipe - A Winter Dinner for a Snowy Night
Elegant enough for company, easy enough for weeknights!
Yesterday was a snowy, cold day and I did not leave the house at all! I had a significant laser treatment on my face on Friday afternoon and Iβm still healing from that so the snow gave me a perfect reason to stay in and get a few things done! I used the time to organize a few things in the house, get caught up on work and plan the week ahead. Since I was so busy, I didnβt really want to stop and take the time to make a pot of soup but still wanted to make a nice warming dinner. I decided to make this delicious Roasted Pork Tenderloin. We really thought the snow event was going to be more significant than it actually was, so like everyone else, we stocked up on some groceries and just happened to have a pork tenderloin in the refrigerator.
This recipe is one of the easiest youβll ever make and itβs on the table in about 30 minutesβ¦and since the seasonings are things you probably already have in your spice cabinet, you donβt have to worry about any special ingredients. This is my go-to recipe when I want something that looks impressive but comes together quickly! Fresh rosemary would be a tasty addition if you have it on hand but other than thatβ¦I wouldnβt change a thing! I served the tenderloins on my favorite white oval platter (similar here) surrounded by the roasted potatoes that I roasted at the same time as the pork. The combination was so pretty and the flavors were nothing short of divine! I used Yukon Gold potatoes, drizzled them with olive oil and seasoned with salt, pepper and a little Honey Aleppo seasoningβ¦OMG they were so good! Keep scrolling for the recipe!
If you have a little extra time and want to make something to go with the pork other than the potatoesβ¦my recipe for Roasted Cauliflower & Chickpeas with Mustard and Parsley would be amazing!
Iβll basically be staying in the house until Thursday when I can put on some makeup and look presentable. There is no telling what I might cook between now and then so stay tuned! If youβre interested in my laser treatment, Iβll be on stories later today to show my progress so be sure to check it out! Iβm still very red and a little swollen, but better today!
Below, Iβm sharing some pieces that I loveβ¦for setting a beautiful table and for preparing a delicious meal! The presentation is always importantβ¦why not add a little beauty to everything, even on a snowy Sunday night!
This pork tenderloin has officially become my cold-weather comfort dinner. It's fancy enough that it feels like a treat, but so simple that I can make it even on days when I'm moving slowly (hello, post-laser face!). I hope you'll give it a try on your next snowy night in (or any night for that matter). Andβ¦the leftovers are amazing!
Let me know if you make this recipe! Thanks so much for reading today!
