Brown Rice Salad with Roasted Carrots, Feta and Pine Nuts
I made this salad last night for a vegetarian main dish. I served it with a simple green salad and also made some roasted chicken for those who didn’t want to eat a vegetarian meal. I thought the salad was very filling and definitely so healthy. I made it earlier in the day and served it at room temperature and it was delicious that way but would also be fabulous served warm. The turmeric and cilantro make it especially healthy! You could substitute (or add) cauliflower to this recipe and it would be amazing, although not as colorful with just cauliflower.
