Creamy & Refreshing Lemon Icebox Pie

If lemon is your thing, you’re going to love my Lemon Icebox Pie! My mother made a version of it when I was growing up and it was my favorite! It’s a little tart, very creamy and a refreshing ending to a meal! Make it the day before you want to serve it because it needs to be in the freezer for at least 8 hours.

I doubled this recipe so I would have an extra pie in the freezer because they’re so delicious but for some reason I had a hard time finding 9 inch pie crusts so I bought a 10 inch and an 8 inch which worked perfectly.

The pie is pictured in a shallow bowl from Haand Ceramics and the pink plate is also from Haand! Haand is a local pottery studio that makes dishes for hotels and restaurants all over the world! They also have a retail store here in Burlington and you can order from the website!
