Fresh Pea and Radish Salad with Fresh Mint and Burrata

Not long ago, I was craving a pea and radish salad and started looking around for a recipe. I love fresh radishes for their peppery flavor and crunch and spring is the best time to eat them! I started looking for recipes and came across several that I liked. I pulled elements from each to come up with this delicious and easy to put together recipe…I know you’ll love it!

On a side note…when I went to the grocery store to buy burrata, I couldn’t find a big ball so I had to buy marinated burrata that came in small bite sized balls. The salad ended up being really delicious, with the marinated burrata, but I would prefer to buy the large burrata ball next time. If you can’t find burrata, you could substitute feta or even goat cheese if that’s your preference. Don’t leave out the pancetta because it’s very delicious and definitely adds great flavor! You’ll notice in the video that I forgot to add the drizzle of olive oil at the end. It was actually delicious without it, but don’t hesitate to drizzle at the end!
