Grilled Peach Salad with Crispy Prosciutto

Earlier this week, I traveled to Winston Salem, NC with my friend and photographer, Sara-Anne. I wanted to take pictures in a different setting so we decided to make an evening of it!

Taking pictures can be exhausting with all of the outfit changes and walking around to find the perfect spot! After a couple of hours, we were exhausted and hungry so we decided to get a bite to eat. I ordered an amazing grilled peach salad and enjoyed it so much that I decided to recreate it at home and this recipe is my creation! I am completely obsessed with the combination of flavors that meld together perfectly for a sweet, salty, spicy experience.

The most important thing when making this recipe is to choose perfectly ripe peaches. The sweetness intensifies when they’re grilled but they need to be sweet and ripe to begin with. The recipe below includes shaved fennel bulb as an optional ingredient. The salad is delicious either way but I didn’t use it in the salad I made because I forgot to buy it when I went grocery shopping (that’s what happens when you don’t have a list). The fennel is really a nice flavor addition!

This is one recipe you’ll want to make all summer long! Peach season is short so enjoy them while they’re available!
