Smoky Spanish-Style Beef and Potato Skillet

This one-pan wonder transforms humble ground beef and potatoes into something truly special. This was such an easy dinner…but I’ll be completely transparent here - after I put the broth and potatoes into the skillet, I thought I turned it down to low and I went upstairs to get a few things done. It wasn’t on low, it was on medium high so the liquid cooked down a little too much. It was still delicious but I think it should be a little more brothy. When I realized what I had done, I turned it off and let it sit for a bit. When I was almost ready to serve, I added the cheese and popped it into a 300 degree oven for about 15 minutes. The whole time I was eating, I kept thinking how delicious it would be with tortilla chips…unfortunately, we didn’t have any…I’ll definitely have some next time! Baldy loved this!
