The Marinated Bean Salad I'm Serving All Summer…With Rosé, Of Course

Make this salad on Sunday and eat it all week long!

I was looking for a recipe to take to a vegan friend and decided you just can't go wrong with beans. I found a dense bean salad recipe that sounded delicious and healthy and tweaked it to make it my own. I love to chop... I find it relaxing, kind of like sweeping, so this salad is right up my alley. There are lots of veggies to chop, but once that's done, you're basically finished. Everything goes into a bowl with a delicious vinaigrette and that's it!

After I photographed the salad, I helped myself to a plate and ate it with french bread, salted butter and a glass of rosé right there at the beautiful table. It was just too perfect! Baldy has been on a business trip all week, so it was the perfect girl dinner... I enjoyed it so much I might do it again tonight! If he were home, I'd serve it alongside chicken or shrimp. Either way, it's delicious, very healthy, and keeps in the refrigerator for days. Sprinkle vegan feta or regular over the top... I forgot the cheese entirely and it was still wonderful.

I love these little blue and white plates (below) that I found in a vintage shop a couple of years ago. I always assumed they were English... because they have that look of old Staffordshire chintz. When I finally flipped one over, the only thing stamped on the back was "Japan." Turns out Japanese potteries made beautiful versions of English transferware in the 1920s and 30s, and that's likely when these were made. No maker, no pattern name, no pedigree... and honestly, I love them more for it. I bought them because they caught my eye and knew I would use them. I also have a stack of small bowls that I fill with potato chips or nuts and take outside in the afternoons with a glass of wine! It’s a small thing, but it makes the afternoon feel special!
