Roasted Chicken with Garlic & Fresh Herbs - Mashed Potatoes Mandatory

Well finally…a new recipe and I promise it’s going to be worth the wait!

We’ve been eating a lot of chicken thighs lately because they’re so easy to cook and packed with protein. We grill them, roast boneless thighs in the oven, or roast them bone-in in a cast-iron skillet. I almost always double the recipe and roast two skillets at once because the leftovers are just as delicious the next day.

Most of the time, I serve these chicken thighs with my coconut rice, but this time I went for full comfort food and made the most incredible mashed potatoesβ€”and WOW…creamy, buttery, melt-in-your-mouth perfection.

I made the mashed potatoes ahead of time and kept them warm in my warming drawer, covered with aluminum foil, but you could also hold them in a 200-degree oven. Serve the chicken over the mashed potatoes and drizzle everything with the extra pan juices, garlic, shallots and herbs.

As the chicken roasts, the garlic turns soft and almost creamy. It’s incredible spooned over the potatoes and would be amazing smeared onto a piece of crusty bread too (adding a little insult to injury here, but why not indulge every now and then?).

I used Honey Aleppo Pepper as one of the seasonings in this recipe and it gives it just a tiny bit of a kick and adds depth and flavor to the pan juices. I’m also trying a new olive oil that my daughter put in my stocking for Christmas and love it!

Over the holidays, I treated myself to a set of shallow bowls (these are also great) that are ideal for serving this dish. I reach for them often because they’re practical, beautiful, and just right for cozy comfort food meals!

Rich, comforting, and satisfying, this is one of those meals that’s worth savoring. Sometimes a little indulgence on a cold winter evening is exactly what you need!
