Slow Cooker Chicken & White Bean Chili

Here in the South, when we finally have the first cool, crisp day, I start dreaming about soup…particularly soup eaten by a roaring fire! We’ve only had one fire so far this year, but I’ve found THE recipe to serve! It’s so easy to make, delicious, healthy…all the things you want in a soup (chili is soup, right?). Anyway, I made it in my slow cooker and I love a good slow cooker soup (chili) because you add all of the ingredients to the slow cooker, close the lid and forget about it! As your soup cooks, the whole house smells good and dinner is ready when you are!

For this Chicken & White Bean Chili, I combined chicken, crushed tomatoes, chicken broth, cannellini beans, onion, garlic, chopped green chiles, cumin, chili powder, salt and pepper and cooked it on low in the slow cooker for 8 hours.

After the chicken finished cooked and all the flavors were combined from cooking for 8 hours, I removed the chicken, shredded it with 2 forks and put it back into the cooker!

Serve this delicious chili with shredded Monterey Jack cheese, Greek yogurt, chopped cilantro, chopped scallions, avocado and a squeeze of lime for the most amazing fall dinner! Add a green salad if you like!

Often, when I make soup or chili, I make extra and put some in the freezer! It’s so easy to double a recipe and freeze half and then you can just pull it out on a busy night and have a healthy dinner in a flash! You’ll love this soup all year long! Enjoy!
