Summer Cocktail - St. Germain Ginger Fizz and The Best Deviled Eggs

Where to start with this post…

Sooo, last Thursday, I had dinner in Wilmington NC and had the most wonderful cocktail made with vodka, lemon juice, mint and St. Germain. I decided to try to recreate it at home, but I wanted to include fresh ginger and couldn’t find a recipe. I found a similar one made with gin and decided to tweak that one a bit and came up with my St. Germain Ginger Fizz.

Moving on…my Instagram friend Darcy Vandenberg from the blog Dear Darcy, and I have started a lifestyle series on Instagram Live and will be going live twice a month sharing recipes, decor, and more. Yesterday, our theme was creating a Memorial Day snack and drink. I decided to share my St. Germain Ginger Fizz recipe and Baldy suggested I share a recipe for deviled eggs. Now…deviled eggs are his favorite, not mine. I don’t love eggs at all! But, most people love deviled eggs and they’re easy to make and a great little pickup, so that’s what I decided on. As I was making my traditional recipe for Southern deviled eggs, I decided to jazz them up a little. I added a teaspoon of Thai Style Green Curry Spice Blend and fried a few pieces of bacon. Well…I now love deviled eggs! These are THE BEST DEVILED EGGS EVER! Baldy ate most of them standing at the kitchen counter and my neighbor came over with her daughter and they finished them. I did eat two myself. I will be making more of these tomorrow for our Memorial Day cookout! The recipes for the drink and the eggs are below and I’ll keep you posted on my next live with Darcy. *Just a note about this spice blend…I’m using it on everything from grilled chicken and salmon as well as in any curry recipe I make.

Along with the deviled eggs, I served fruit and cubed cheese with honey and a platter of pimento cheese with Wickles Pickled Okra (the best to serve with Bloody Marys) and crackers. It was an easy spread to make and there wasn’t much leftover!

Today will be low key for us because it looks like the weather will not cooperate, but sometimes those days are really nice! Tomorrow, the family is coming over, including my mother who lives in a Memory Care Unit and hasn’t been able to leave since last March) and we’re cooking out! It should be lively!
