I have been planning to make Yotam Ottolenghi's recipe for Eggplant with Buttermilk Sauce for sometime now! After making it, I wonder what took me so long! The recipe is from the cookbook PLENTY by Yotam Ottolenghi. It is easy and delicious beyond words.
I cheated a little and bought the pomegranate seeds in a container.
To me this is the perfect, very elegant, vegetarian dinner.
