Kale and Caramelized Onions

My daughter Lauren shared this delicious recipe with me and I love it so much that I want to share it with you!  Kale is so healthy and adding caramelized onions makes it even more healthy and delicious.  I served it with a pork tenderloin, and it would it would also be great with grilled chicken, or as part of a veggie plate for a vegetarian dinner.  

This recipe is so simple...saute red onion, add honey, salt and pepper, then add kale until wilted. That's it!  Scroll down for a more detailed and printable recipe.
