Chicken & Goat Cheese Flatbread

The flatbread your weeknight needs…

Happy Monday and happy March!

If you caught my Instagram Live last night, you saw me make these delicious Goat Cheese & Chicken Flatbreads in real-time. I had a great time and I can tell you that this gem of a recipe is delicious and one you’ll want to make often!

This recipe includes simple ingredients that come together quickly for a melt-in-your-mouth crowd pleasing dinner or appetizer that honestly tastes like something you would order at a high-end bistro.

By using store bought Naan as the canvas and layering on a creamy goat cheese/cream cheese base with garlic and thyme, I created a foundation that’s crispy, herby, and incredibly satisfying. The Naan is then topped with roasted shredded chicken, a blend of mozzarella, Asiago, and freshly grated Parmesan, and and finished with fresh thyme and…the real star of the show - a rich balsamic glaze drizzle. Just in case you were wondering…grating your own Asiago and Parmesian makes all the difference!

If you’re serving these for a weeknight dinner, a simple salad with arugula and a lemony vinaigrette dressing (or use this delicious Persimmon Vinegar) would be delicious! These flatbreads would also be ideal as an appetizer with a glass of wine…just cut into smaller pieces and serve on a wooden board.


And…speaking of wine

I love a dry Rose and that’s what I served with the flatbreads, however other options include a classic Sauvignon Blanc which would be delicious with the goat cheese. I would recommend a New Zealand Sauvignon Blanc or my favorite, a Sancerre.

If you’re a red wine lover, a light-bodied Pinot Noir is your best friend here. It has enough bright red fruit (like cherry and raspberry) to play beautifully with the balsamic glaze, but it’s light enough that it won't overwhelm the roasted chicken.

You could also serve a dry Prosecco. The bubbles act as a palate cleanser for all that rich, melted mozzarella and Asiago, making every bite feel like the first one. Honestly, this sounds like a party to me!

These flatbreads are proof that you don't need hours in the kitchen to put a high-quality dinner on the table. Grab the Naan, shred your chicken, and don't skimp on the fresh thyme because it’s the small details that make this dish.
