The Book Club Casserole Everyone Wanted the Recipe For

Today I shared a new post over on Substack all about our latest book club evening, and it was one of my favorites yet. Last month’s pick was Theo of Golden by Allen Levi, and for the first time…we mixed things up with an activity. Inspired by the book, we painted each other’s portraits, and it turned out to be such a fun, memorable addition to the night. Truly one of those β€œwhy don’t we do this more often?” ideas. One of the things I love most about our book club is that there is always a delicious meal involved, and this evening was no exception. The menu included pork tenderloin, a warm Brussels sprouts salad, hashbrown casserole, and a fig cheesecake to finish things off…cozy, comforting, and perfect for conversation after dinner.

I had originally planned to share both the Brussels sprouts recipe and the hashbrown casserole with you, but when I went to the grocery store there wasn’t a Brussels sprout in sight. How crazy is that? I will absolutely be making that salad soon because it was over-the-top good, and I’ll be sure to share it when I do. In the meantime, I thought you’d all enjoy making the hashbrown casserole, which was every bit as comforting and crowd-pleasing as it soundsβ€”so here it is!


I’ll hopefully be able to share the Brussels Sprouts recipe this week if I can find any Brussels sprouts!
