Pesto Tortellini with Summer Vegetables & Mozzarella
Happy Saturday…
I’m finally sharing a new recipe and this is such a good one! I was thinking about summer flavors and craving pasta and this recipe for Pesto Tortellini with Summer Vegetables & Mozzarella is what I came up with! Quick and easy is my mantra because I’m so busy right now and don’t have much time to spend in the kitchen…preparing or cleaning up!
I know it’s not quite summer vegetable season yet, but this dish was still very very delicious and I’ll make it all summer long! Once you make it, you won’t even need to look at the recipe again…it’s that simple!
I threw the pasta together, Baldy grilled some chicken and we had a wonderful, healthy dinner in no time, and…bless his heart, he cleaned up the whole kitchen! Now that’s my kind of dinner!
This pasta makes such a pretty presentation so it’s dinner party worthy! I served it with Vin de Provenance AIX Rosé and it was a perfect pairing…but I’m a rosé girl and drink it all year long! It would also be good with a very light red or a Sancerre.
I saved a about 1/4 cup of corn and a few unroasted cherry tomatoes to add at the end just to make the presentation even prettier…along with more fresh basil. Keep scrolling for the recipe!
My daughters are all in town with the grandchildren this weekend and we’re going out for sushi tonight! It should be lively and I’m so looking forward to it! And then…on Monday, Baldy and I are headed to NYC for a couple of days! We’re going to a dinner for a friend of his and I’m getting all dressed up! Can’t wait to show you my dress!
