Mexican Slow Cooker Chicken

As the holiday season kicks into full swing, life gets wonderfully busy, but that doesn’t mean dinner has to take a back seat. Between gift wrapping, gatherings, and endless to-do lists, we often just run out of time! I’m all about easy recipes that deliver big flavor with minimal effort and this Slow Cooker Mexican Chicken is one of my go-to recipes…just three simple ingredients - chicken, taco seasoning, and fresh salsa come together to create a tender, flavorful dish that’s so delicious without the fuss. I’ve also rounded up a few of my favorite kitchen essentials from Williams Sonoma that make both cooking and serving this dish even more special. Keep scrolling for the recipe!

If you happen to have a little extra time, this chicken makes incredible quesadillas. Just layer the chicken with a sprinkle of cheese inside a soft flour tortilla, brush it with olive oil, place on a baking sheet and bake at 350 degrees until golden and crisp. Serve with the same toppings and watch them disappear!

The holidays may be busy, but good food doesn’t have to be complicated!
