Quick Carrot Cake with Cream Cheese Frosting - Make This Cake Tonight!

Happy Fall, Happy Halloween, Happy Happy!

Happy Sunday Everyone! Yesterday was a very busy day around here! We hosted a birthday party for my little granddaughter Lawson…she turns one on Wednesday! We invited both families and a believe me…it was a crowd! It’s hard to believe she’s already one and also that my oldest grandchild is ten! Time is marching on and I just feel so blessed to have these beautiful little people in my life! Lawson…we call her Sissy or Sissy Lou had a great time and at the end, she was done…ready to go home and grumpy, but that’s to be expected! I made snacky food…chicken salad in phyllo cups, pimento cheese, little muffins with smoked turkey and peach preserves and mozarella balls and tomatoes on skewers with pesto. A good time was had by all and we don’t have too much cleaning up to do this morning! When everyone left last night and we cleaned up what we could, Baldy and I sat by our fireplace and enjoyed a little downtime - it was a very nice ending to a fun day!

Today, is Sissy’s Baptism and we’ll go to church and then to a local restaurant for brunch…this has been a busy weekend for sure but so much fun! I’m wearing my dress from Sue Sarton with boots for the baptism and it’ll be perfect because the weather is still pretty warm here. I’m sure we’ll crash after everyone leaves, but we’ll be left with great memories and that’s all that matters!

Since it’s been such a busy weekend, I haven’t really had a lot of time to work on a blog post, so I’m reposting this great recipe for Carrot Cake with Cream Cheese Frosting! It’s such a delicious and easy cake and perfect for this time of year. I hope you’ll make it and let me know your thoughts!
